- 210 gms. Icing Sugar
- 2 tbsps Lemon-Matcha Powder
- 500 gms. All-purpose flour/Maida
- 1/4 tsp Salt
- 310 gms gms. EVOO/Corn/Veg/Canola Oil
- 1 For the Egg Yolk Wash: Egg Yolk- Large Preferably
- 1 tbsp Water (RT): To mix with the egg yolk & well whisk the same, to finally pass it through a sieve
- 1-2 Baking Tray/Dish: Large, lined with the parchment paper or Silicone Mats

- First Up: In a blender jar add in the Green Peas & Ground it nice & smooth (Dry) & sieve at least 3-4 times before transferring the same into a separate large mixing bowl- Again, in another separate bowl- Sieve in the aforesaid measured quantities of the All-purpose flour, Salt & the Icing Sugar for about 2-3 times, before finally sifting it again to the bowl wherein the ground Green Peas are kept

- Alternatively, roll out the entire dough alike a wooden log & cut up into round/square/rectangular sizes or roll it out even more to cut it up with the help of your choicest shaped cookie cutter (Any) - Place them onto the Baking Tray lined up with the parchment paper or silicone baking sheet- Brush them with the whisked egg yolk mixed with some water & oil- Garnish with a whole green pea pearl on its top or white/milk chocolate chips or similar- You may take your own call on it



- Again, refrigerate it for just 30 mins time: Then place it into the preheated oven @160C for about 15-20 mins time (Oven Temp. Differs), so take your own call on it based on your own experience- Checkout once it̢۪s about 80% done/baked so as to have a fair idea as in how much time more you need to keep it for baking- Turn off the oven once done- Allow it to rest inside the hot oven for another 3-5 mins time before placing it onto the cooling rack



- Let it cool down completely on the hot silicone baking sheet itself while that̢۪s placed onto the cooling rack-
Store it in an airtight container to go for about months time but ensure to cool it down completely before the storage for its long, sustainable shelf life- It remains as is for over 2-3 months time, if stored correctly
